    Cranberry Coffee Cake Recipe


    2 cups all-purpose Flour
    2 cups of fresh Cranberries
    1/2 cup unsalted softened Butter
    2 Eggs
    1 tsp of Salt
    1 3/4 cups granulated Sugar
    1 tbs Baking Powder
    1 tsp Vanilla Essence
    1/2 cup of Milk


    ~ Preheat oven to 350°F.

    ~ Wash and blend the cranberries along with 3/4 cup of granulated sugar.

    ~ In a big bowl, mix flour, salt and baking powder.

    ~ Now, using an electric mixer, beat the butter along with the remaining granulated sugar till it turns fluffy and light.

    ~ Add the eggs and vanilla essence and beat again for 2 minutes.

    ~ It’s time to add the flour mixture and milk and beat for more 3 minutes.

    ~ Pour half of the batter evenly into a greased cake pan.

    ~ Now, spread the cranberries mixture evenly over the batter.

    ~ Add the remaining batter at the top of the cranberries mixture.

    ~ Bake for 40 minutes or until it is well cooked. You can test it by inserting a knife into the cake and if it comes out clean, then know that the cake is ready.

    ~ Transfer the cake into a serving dish and leave to cool down before serving.
