How To Make Mauritian Aubergine Chutney

Mauritian food includes Indian, Chinese and especially Creole dishes. A typical Mauritian meal comprises of rice as staple, a pulse dish, curries, salads and chutneys.

Today, I am going to share with you the Mauritian Aubergine Chutney Recipe. This Chutney is very delicious and can be served either with rice, bread, pharata or puri. Just try it and enjoy with your family and friends.

Aubergine Chutney Recipe


1 large Aubergine (Eggplant)
3 to 4 tbs of Vegetable Oil
5 Garlic Cloves, crushed
1 Onion, finely sliced
2 dried Chillies, chopped
1 tsp of Vinegar
1 tbs of freshly chopped Coriander Leaves
Salt to taste

Cooking Instructions

~ Rub the aubergine with a little bit of oil and put it on a preheated grill.

~ Grill it until soft and brown on all sides.

~ Peel off the skin from the aubergine, place the flesh in a bowl and mash it.

~ Add the sliced onion, garlic, salt, chillies and vinegar and mix well.

~ Sprinkle with the chopped Coriander leaves on the top.

You can use the Grill you are seeing in the picture below as it will be very useful to you. It is a portable Grill which can be set up in seconds. It is very easy to take along with you if ever you are going for camping or other places where you will want to enjoy cooking in the open air. Furthermore, it has a large cooking surface. You can also control the knobs in order to adjust the temperature. To make your task more easier, it has a  fold-up stand with wheels that collapses down to a convenient pack-away size. It also consists of a removable grease management tray which you can clean easily. So, I find that this is a great Grill and I am sure you will enjoy using it too.
